Camarones Salteados (Sautéed Prawns) a Classic Ecuadorean recipe for a dish of prawns fried with potatoes, and mushrooms in a garlic and parsley base.

Ingredients:

500g prawns, peeled and halved lengthways
2 tbsp olive oil
2 medium potatoes, peeled and diced
225g fresh mushrooms, wiped clean and quartered
2 garlic cloves, crushed
1 tbsp fresh parsley
salt and freshly-ground black pepper, to taste

Method:

Add half the oil to a hot frying pan over high heat. Add the prawns and sautée for 3 minutes, or until pink. Remove with tongs and set aside.

Add the remaining oil to the pan and use to fry the potatoes for 4 minutes over medium heat. Stir well, cover the pan and cook for about 9 minutes more, or until the potatoes are tender. Shake the pan from time to time to ensure that the potatoes do not burn.

Stir in the mushrooms, garlic and parsley. Return the prawns to the pan and mix well to combine. Allow to re-heat for 2 minutes, then serve.
