Camaro Grelhado com Molho Cru (Grilled Prawns with Raw Sauce)
Camaro Grelhado com Molho Cru (Grilled Prawns with Raw Sauce) is a traditional Angolan recipe for a classic dish of prawns threaded on skewers and grilled which are brushed with a spiced onion and garlic sauce. Ingredients:
450g shelled tiger prawns
2 garlic cloves, crushed
100g finely-chopped spring onions
1 tsp ground cumin
1/4 tsp salt
4 tbsp white wine vinegar
4 tbsp water
Method:
Place all the ingredients (except prawns) in a pestle and mortar and grind to a paste. Thread the prawns onto skewers then brush with the sauce before cooking on a barbecue until done (about 3 minutes a side).
Brush again with the sauce when turning. Serve as a starter or with rice as a main course.
