Here is a modern Fusion barbecue recipe of mixed vegetables dressed in a Louisiana Cajun inspired spice blend.

Ingredients:

4 ears of maize (corn cobs)
2 sweet potatoes, scrubbed clean (do not peel)
25g butter, melted

For the Spice Blend:
2 tsp paprika
1 tsp ground cumin
1 tsp ground coriander seeds
1 tsp freshly-ground black pepper
1 tsp hot chilli powder


Method:

Combine the spice blend ingredients in a bowl and stir with a fork to blend.

Remove all the husks and silks from the corn cobs then cut each cob into four equal pieces.

Cut the sweet potatoes into thick slices (but leave the skins on). Brush the corn cob pieces and the sweet potato slices with melted butter then sprinkle over the spice mix.

Place the vegetables on the rack of a barbecue set over medium-hot coals. Cook, turning frequently, for between 12 and 15 minutes, brushing the vegetables with more melted butter and sprinkling with extra spice mixture during this time.

Transfer the maize and sweet potatoes to a large serving plate. Serve hot.
