Byrek me Spinaq (Spinach Pie) is a traditional Albanian recipe for a spinach and Feta cheese pie in a filo pastry shell. The full recipe is presented here and I hope you enjoy this classic Albanian dish of: Byrek me Spinaq.

Ingredients:
240ml good olive oil
30 filo pastry leaves
675g spinach, shredded
150g Feta cheese, diced
80g spring onions, chopped
2 eggs
1/2 tsp salt
Method:
Brush a baking pan with a little of the oil (a round baking pan of about 25cm diameter is more authentic, but any similarly sized pan will do) and begin laying the pastry leaves inside. Do this in opposing pairs then brush with the olive oil and layer tow more pairs of pastry leaves on top. Continue like this until all the pan has been covered and half the filo pastry leaves have been used up (remember to leave an overhang of about 3cm over the sides of the dish).
In a bowl, sprinkle the spinach with salt and toss with your hands to combine. Now add the Feta cheese, remaining oil, onions, eggs and salt. Stir well then spread the mixture in the dish. Now cover the spinach mixture with the remaining filo pastry leaves (repeat the initial layering process). Roll up the overhanging pieces of dough to form a crust, brush the top with olive oil and season with salt.
Place in an oven pre-heated to 170°C an bake for about 45 minutes, or until the pastry is golden brown and crisp. Serve hot with a green salad an a sauce of thinned-down yoghurt.
