Buttery Onion Squares: An Irish recipe for a classic vegetarian snack of buttery pastries made with potatoes and onions that are toped with cheese and baked.
Ingredients:
450g potatoes, boiled in their skins
1 small onion
175g butter
350g self-raising flour
2 tsp baking powder
120ml buttermilk
milk for glazing
finely-grated cheese for sprinkling
salt and freshly-ground black pepper, to taste
Method:
Peel the potatoes as soon as they can be handled then pass through a vegetable mill or potato ricer (or a fine-meshed sieve) then set aside to cool.
In the meantime chop the onion then fry gently in 20g of the butter for about 4 minutes or until soft but not coloured. Turn onto a plate and set aside to cool.
Sift together the flour, baking powder and salt into a bowl. Rub in the remaining butter then lightly mix in the potatoes, onions and buttermilk to form a smooth, soft, dough. Turn this dough out onto a lightly-floured work surface, knead lightly and roll out to about 2cm thick.
Using a sharp knife cut this dough into 5cm squares and arrange them about 5cm apart on a buttered baking tray. Brush the tops with milk and sprinkle over the cheese. Transfer to an oven pre-heated to 220°C and bake for about 12 minutes, or until well rise and lightly browned in colour.
Serve warm.
