Butterscotch Puffs: A British recipe for a classic sweet (candy) made from puffed wheat and sultanas smothered in butterscotch and served garnished with glace cherries.

Ingredients:

50g (2 oz) butter
50g (2 oz) soft brown sugar
1 tbsp golden syrup (corn syrup)
50g (2 oz) puffed wheat
50g (2 oz) sultanas

To Finish:
6 red glacé cherries
6 green glacé cherries

Method:

Combine the butter, sugar and syrup into a heavy-based pan and heat until the butter has dissolved and the sugar has melted. At this point bring the mixture to a boil and continue boiling rapidly for 2 minutes.

Stir the puffed wheat and sultanas into the butterscotch until well coated.

Divide the resultant mixture between 12 paper fairy cake (or mini muffin) papers. Decorate each one with a glacé cherry sitting on top.

Allow to cool before serving.
