Buttermilk Cornbread

Ingredients:

190g cornmeal
40g plain flour
1/4 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 egg, beaten
240ml buttermilk

Method:

Combine the dry ingredients together, form a well in the centre and add the egg and buttermilk. Mix thoroughly then pour the batter in a heated 20–22cm cast-iron frying pan.

Place in an oven pre-heated to 200°C (400°F/Gas Mark 6) and bake for 20 minutes, or until lightly browned.

Allow to cool, cut into squares or wedges. Serve warm.
