Ingredients:
450g plain flour
30g sugar
30g butter
pinch of salt
300ml buttermilk
1 tsp bicarbonate of soda
1 tsp cream of tartar
Method:
In a bowl, combine the flour, sugar, salt, bicarbonate of soda and cream of tartar. Dice the butter and rub into the flour mix with your fingertips. Slowly add the buttermilk and bring the mixture together as a soft dough.
Butter and flour a loaf tin then add the buttermilk and transfer to an oven pre-heated to 180°C. Bake for about 45 minutes, or until well risen, cooked through and golden (a skewer inserted into the centre of the cake will emerge cleanly). Allow to cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
