Sea Aster is a classic seaside member of the Aster/Daisy family with edible, fleshy leaves that have an unusual sweet and salty taste. They can be eaten raw in salads, but are also excellent lightly cooked. This dish treats the leaves like a potherb, producing an accompaniment that is excellent with fish.
Ingredients:
2 garlic cloves, crushed
4 generous handfuls of
sea aster leaves
5 tbsp natural yoghurt or creme fraiche
coarsely-ground black pepper, to taste
generous knob of unsalted butter
Method:
Wash the sea aster leaves throughly, turn into a colander and set aside to dry.
Melt the butter in a non-stick frying pan. When the butter begins to foam, add the garlic and stir-fry for 30 seconds only. Now add the washed sea aster leaves and stir fry for a few minutes, or until wilted.
Stir in the yoghurt or creme fraiche until blended. Take off the heat and serve immediately as an accompaniment. This is particularly good when served with fried fish.
