Buttered Brazils: Classic British recipe for a sweet (candy) of brazil nut in a butter syrup base that makes an excellent Christmas treat.
Ingredients:
175g (7 oz) granulated sugar
75g (3 oz) soft brown sugar
75g (3 oz) golden syrup (corn syrup)
5 tbsp water
25g (1 oz) butter
pinch of bicarbonate of soda
100g (3 1/2 oz) Brazil nuts, shelled
Method:
Combine the sugars, syrup and water in a pan over low heat. Stir until the sugar has dissolved then add the butter and bring the mixture to a boil.
Continue boiling the mixture gently until a small drop dropped into cold water forms a hard ball (this is the hard ball stage, equivalent to 150°C [300°F] as measured on a confectioner's thermometer).
Take off the heat and add the bicarbonate of soda, followed by the shelled Brazil nuts.
Using a warmed teaspoon scoop out the nuts and drop onto a baking tray lined with greaseproof (waxed) paper. Set aside to cool and set. Cover in cellophane wrap and store in a jar or tin.
