To make burdock root flour you need tender, young, burdock roots and it's best to gather either in the spring or in the autumn. 2kg of burdock root will yield about 400g flour.

Ingredients:

3kg tender young burdock roots

Method:

Scrub the burdock roots completely clean, chop roughly then place in a pan of boiling water and cook for 45 minutes. When tender, strain off the water, transfer to a food processor and pulp the burdock roots.

Spread the resultant pulp very thinly on a sheet then either dry in the sun or dry in a low oven with the door ajar (this can take up to 45 hours).

When completely dry, grind to a fine flour in a coffee grinder then transfer to an air-tight jar for storage.
