Red Millet Asida (Brown Ugali)

Red Millet Asida (Brown Ugali) is a traditional Ugandan recipe for a classic accompaniment of red millet flour cooked in water and milk until you have a stiff mass and which is a staple in Uganda. Ugali is made throughout East Africa, this version is from Uganda and, uses red millet flour rather than the more usual white cornmeal.

Ingredients:

500ml water
1 tsp salt
150g red millet flour

Method:

Combine the water and salt in a saucepan and bring to a boil then very slowly pour the millet flour in a steady stream into the boiling, salted, water, stirring constantly to prevent lumps from forming.

Continue cooking, stirring constantly, for a few minutes or until the mixture begins to thicken. Reduce the heat to low and continue cooking the ugali for about 15 minutes, stirring every few minutes.

You need to continue cooking the ugali is very stiff and begins to pull away from the sides of the saucepan. Serve hot.

Note that ugali is different from that other Ugandan staple, Posho which is made from more finely ground maize flour.
