Salade de la mer (Seafood Salad) is a traditional French recipe (from Brittany) for a classic salad of scallops and prawns mixed with green salad and cherry tomatoes in a hazelnut and vinegar dressing. This is a classic Breton dish of mixed seafood, hazelnuts, green salad and tomatoes in a hazelnut oil and cider vinegar dressing.
Ingredients:
300g Scallops
100g Cooked pink prawns
1 Green salad, washed and drained (mesclun mix)
1 punnet Cherry tomatoes, washed, drained and halved
1 tbsp Crushed hazelnut
1 Onion, chopped
1 pat butter
2 tbsp Hazelnut oil
2 tbsp Cider vinegar
2 sprigs Dill, chopped
Salt and freshly-ground black pepper, to taste
Method:
Pour the oil and vinegar into a salad bowl. Add the chopped onion and dill and season with salt and black pepper. Add the green salad and tomatoes then toss to mix.
Heat a little butter in a pan over high heat. Add the scallops and brown quickly. Transfer to a plate to cool.
Add the hazelnuts, peeled prawns and scallops to the salad. Toss once more to combine then serve with crusty bread.
