Cremes caramel au beurre sale (Breton salted butter caramel cake)

Ingredients:

400g of flour
250g soft semi-salted butter
200g caster sugar
4 egg yolks
1 whole egg
1/2 packet (3.5g) of yeast
450g (1 large pot) of salted butter caramel

Method:

Pre-heat your oven to 180°C.

Sift the flour into a mixing bowl then add the yeast and sugar. Mix in the egg and egg yolks then add the softened butter.

Mix until you have a smooth dough. Knead lightly then divide into two equal portions. Take the first half and roll out on a lightly-floured work surface until large enough to cover the base and sides of your pie dish (or you can make this in a 24cm diameter springform cake tin).

Spread a generous layer of salted caramel over the dough. Now roll the second piece of dough until large enough to cover the dish. Crimp the top and bottom pieces of pastry together and trim away any excess.

Make small crosses or mark patterns in the top dough to decorate.

Transfer to your pre-heated oven and bake for 30 minutes.

Allow to cool completely before unmoulding, slicing and serving.
