This is a classic Breton breakfast cake made with a blend of wheat and buckwheat flours that's flavoured with apples and hazelnuts.

Ingredients:

2 apples, peeled and diced
200g of T65 flour
100g buckwheat flour
100g of light brown sugar
1 tsp baking soda
3 eggs
140g butter, melted and cooled
150ml of whole milk
1 small handful of hazelnuts, crushed

Method:

Pre-heat your oven to 180°C. Grease and line a loaf tin.

In a mixing bowl beat together the eggs and sugar until pale and creamy. Whisk in the melted butter and the milk.

Sift over the flour and bicarbonate of soada then mix into the other ingredients until just combined.

Scrape the batter into your loaf tin then level the top and scatter over the crushed hazelnuts.

Transfer to your pre-heated oven. Bake for 45 minutes until golden brown and springy to the touch. When done, a skewer inserted into the centre of the cake should emerge cleanly.

Allow to cool for 10 minutes in the tin then transfer to a wire rack to cool completely before slicing and serving.
