Breid (Breadfruit Puffs) is a traditional Pitcairn Islands recipe for a classic savoury snack or accompaniment made from a fried blend of mashed breadfruit, inion, garlic, parsley, eggs and flour coated in breadfruit. Ingredients:
1 Breadfruit Peeled, diced without centre, cooked and mashed
1 onion finely diced
1 tsp Garlic, minced
1 sprig parsley
Salt to taste (approximately 1 tsp)
2 eggs
60g flour
Breadcrumbs, for coating
Oil for frying in a pan
Method:
Peel and core the breadfruit then cut into pieces. Place these in a pan of boiling, salted, water and cook for about 25 minutes, until the breadfruit is tender.
Drain the breadfruit then place in a bowl and mash (easiest to do when still hot).
Add in all the remaining ingredients, except the breadcrumbs.
For the mixture into small balls then roll in the breadcrumbs to coat.
Place a frying pan over medium heat. Add a little oil and use to fry the breadfruit puffs (in batches if needed) until golden brown on the outside.
