This is a classic recipe for small triangles of bread that are toasted by baking or cooking under a salamander grill. The recipe goes back to Elizabethan times, but these were also commonly used as garnishes in Victorian recipes. Here I have provided the recipe in modern form.

Method:

Remove the corner crusts then cut along the length of a loaf of bread. Slice the loaf into very thin triangular shapes about 2mm thick.

Arrange these segments on a baking tray, ensuring that they do not overlap, then place in a cool oven (about 120°C) to dry out and colour to a light golden brown on each side.

As an alternative, the sippets can be toasted under a salamander grill set to medium heat (note that this method, though authentically Victorian, requires constant attention).
