Bread Sauce: Classic British recipe for a sauce of breadcrumbs and onion in a milk base traditionally served with roast fowl.
The traditional bread sauce is one of the classic British sauces and makes the perfect accompaniment to chicken or turkey. This should be a part of every cook's repertoire.
Ingredients:
110g freshly-prepared white breadcrumbs
1 large onion
15 whole
cloves
1
bay leaf
8
black peppercorns
600ml full fat milk
50g butter
2 tbsp double cream
salt and freshly-ground black pepper, to taste
Method:
Slice the onion in half and stud it with the cloves. Add the milk to a saucepan along with the clove-studded onion, bay leaf and peppercorns. Season with a little salt then bring everything just to a boil. Immediately take off the heat, cover the pan with a lid and allow to infuse in a warm place for at least 2 1/2 hours.
After this time remove the onion, bay leaf and peppercorns (reserve these) then stir in the breadcrumbs into the milk and add half the butter. Place on a very low heat, stirring occasionally, until the breadcrumbs have swollen and the sauce has thickened (about 15 minutes). Add the reserved onion, bay leaf and peppercorns to the sauce and leave the pan in a warm place to infuse.
Just before serving remove the onion and the spices, re-heat gently then add the remaining butter and the double cream. Adjust the seasoning, pour into a warmed sauce boat and serve.
