Brabusko

This recipe calls for cracked or crushed millet (brisures de mil in French). Millet can be cracked in a coffee grinder or by pounding in a mortar

Ingredients:

3kg cracked millet
2l water
oil or melted butter
salt, to taste

Method:

Bring the water to a boil and season with a little salt. Whilst stirring constantly, add the millet as a slow, steady stream. Once all the millet has been added keep stirring vigorously to ensure that no lumps form.

Add a little oil or butter (this helps separate the grains) and stir to mix. Cover the pan and cook over low heat for 30 minutes. After this time, turn the mixture into a dish (traditionally a gourd).

Set aside to cool and every now and then separate the grains with a spatula or by running them through your fingers.

Serve warm with a sorrel (hibiscus) based sauce. If desired, you can mix a little more butter into the millet.
