Boxty
Boxty is a traditional Irish recipe for a classic potato cake/pancake made with grated potatoes combined with flour, mashed potatoes, egg and milk that are fried until golden and which are traditionally served with bacon and eggs. Boxties are traditional Irish potato cakes, typically served with eggs and bacon.
Ingredients:
230g raw potatoes, grated
125g plain flour
210g mashed potatoes (this is a great way of using-up leftovers)
1 egg
1 tbsp milk
4 tbsp olive oil (or bacon fat)
salt and freshly-ground black pepper, to taste
Method:
Add the grated potatoes to a bowl and combine with the flour then stir-in the mashed potatoes until combined. Meanwhile stir together the egg and milk in a separate bowl before mixing into the potatoes. Season with the salt and black pepper.
Heat the oil in a large frying pan over medium high heat then drop in the potato mixture by the spoonful, forming patties about 5cm in diameter. Fry until browned on the base (about 4 minutes) then flip over and fry on the other side for about 4 minutes more.
When ready drain on kitchen paper then serve warm.
