Ingredients:
2 tbsp olive oil
1 small onion, chopped
1/4 tsp ground coriander seeds
150g bulgur wheat
250ml water
60g seedless raisins
60g pitted dates, chopped
60g dried figs, chopped
1 1/2 tbsp pine nuts, chopped
1 1/2 dessert spoons parsley, chipped
1 tsp salt
1/4 tsp freshly-ground black pepper
Method:
Heat the olive oil in a pan, add the onion and fry until tender (about 4 minutes). Add the coriander and fry for 1 minute more then stir in the bulgur wheat and cook for 2 minutes.
At this point, stir in the water and bring to a boil. Reduce to a simmer, cover the pan and cook for about 12 minutes, or until all the water has been absorbed and the bulgur wheat is tender.
Str in the dried fruit, along with the herbs, salt and black pepper, stir well to combine then turn into a bowl and serve as an accompaniment.
