Boulettes à l'igname Nigerienne (Yam Dumplings from Niger): Classic Nigerienne recipe for an accompaniment of dumplings made from a blend of boiled yam, onion, tomato and egg that are dusted with flour and fried to cook.

Ingredients:

500g yam
1/2 onion, finely chopped
1 tomato, finely hopped
1 red bell pepper, finely hopped
1 egg, beaten
salt and freshly-ground black pepper, to taste
oil for frying
flour, for dusting
herbs (savory, thyme and parsley)

Method:

Peel the yam and cut into pieces. Bring a pan of salted water to a boil, add the yam and cook for about 30 minutes, or until tender.

Drain the yam pieces then mash in a bowl until smooth. Work in the onion, tomato, bell pepper and herbs. Season to taste then work in the beaten egg. Mix thoroughly and shape the mixture into balls.

Dust the balls with flour and set aside.

Add oil to a depth of 2cm in a pan. When hot add the yam balls and fry until nicely browned all over and heated through.

Remove with a slotted spoon, drain on kitchen paper and serve.
