This is a traditional Victorian method of quick pickling fish. This specific version is from Boscastle in Cornwall.

Ingredients:

4 or more mackerel (fillets are probably best)
2 bay leaves, chopped
1/2 bunch parsley, chopped
6 garlic cloves
1 blade of mace
1 sprig of thyme
1 onion, chopped
10 black peppercorns
salt and malt vinegar

Method:

Clean and fillet the mackerel, removing as many bones as you can. Arrange in a single layer, skin side down, in a non-reactive baking dish. Scatter over the onion and parsley then add the remaining ingredients. Scatter over salt to taste (I used 2 tbsp sea salt) then pour over enough vinegar to submerge the fish.

Transfer to the centre of a moderate oven and bake for 45-50 minutes. When done, remove from the oven, transfer the fish to a serving dish with a fish slice then strain the vinegar over them. Set aside until cold then serve.
