Bori Bori, also known as Vori Vori, is a Paraguayan soup made of seasoned chicken, a corn flour-thickened broth, root vegetables, and small balls of cheese and cornmeal. Its hearty and filling ingredients make it a popular comfort food in Paraguayan cuisine, often enjoyed as an evening meal in colder seasons.
Ingredients:
3 Chicken breasts, thinly sliced
3 boneless Chicken thighs, chopped
1 Large onion, diced
4 spring onions, Sliced
1 Green bell pepper, diced
2 Tomatoes, blanched, peeled, de-seeded and diced
225g Pumpkin, cubed
1 Carrot, diced
2 Bay leaves
1/2 tsp Ground cumin
Salt and Freshly-ground black pepper, to taste
6 tbsp Vegetable oil
250g extra-fine corn meal
150g Queso paraguayo (Paraguayan cheese) or fresh cheese, grated
3l Water (approximately)
Method:
Heat the oil in a pan over medium heat and use to fry the chicken pieces until golden brown all over.
Once the chicken is nicely browned remove with a slotted spoon and use the remaining oil to fry the onions, spring onions and tomatoes. Season with salt and black pepper, to taste.
Now, add the pumpkin and carrots and cook over medium heat while continuously stirring for about 5 minutes.
Finally, return the chicken to the pan then add the water, bay leaves, cumin and ground pepper.
Bring to a boil and cook for 45 minutes over medium heat.
For the Dumplings: Combine the corn meal and cheese in a large bowl.Add about 2 tablespoons of the broth that’s cooking on the side to bring the ingredients together as a dough.
Knead your dough till it’s not too sticky and not too hard. Once that’s done, form balls the size of large grapes and add them to the pot with the remainder of the ingredients.
Your dumplings will rise to the surface when cooked. At this point take off the heat and set aside to cool for 10 minutes before serving.
