This confection, also known as Plot Toffee, is a traditional form of toffee that is often served at Bonfire Night parties (November 5th).

Ingredients:

450g brown sugar
120g butter
120g black treacle (molasses)
1 tbsp malt vinegar
1 tbsp water
1 tbsp milk

Method:

Combine all the ingredients (except the vinegar) in a saucepan and bring to a boil, stirring constantly. Continue boiling gently for about 20 minutes, still stirring all the while, until you reach the Hard Crack Stage (149–154°C), when a drop of syrup added to water will solidify into threads that will shatter at the slightest torsion.

Remove from the heat and stir in the vinegar then pour into a well-greased shallow tin. When nearly set score the toffee deeply with a knife to yield bite-sized squares. Allow to set completely then break into squares and store in an air-tight tin until needed.
