Bolo à Moda da Guiné Bissau (Cake in the Style of Guinea-Bissau)
Bolo à Moda da Guiné Bissau (Cake in the Style of Guinea-Bissau) is a traditional Guinean (from Guinea-Bissau) recipe for a classic simple cake of an egg, flour, butter and milk batter. Ingredients:
250g butter
18 dessert spoons plain flour
18 dessert spoons sugar
4 eggs
a little milk
Method:
In a bowl, beat together the eggs with the butter and sugar until the mixture is smooth and thoroughly combined. Slowly add the flour with a little milk (you are looking for a loose batter). Beat well for 15 minutes to incorporate air into the batter.
Turn the batter into a cake tin that's been buttered and floured. Transfer to an oven pre-heated to 180°C. Bake for 30 minutes, or until the cake is golden brown on top and cooked through (a skewer inserted into the centre should emerge cleanly).
Allow to cool in the tin for 10 minutes then remove the cake tin and set the cake on a wire rack to cool completely before slicing and serving.
