Bolitas de Jamon (Ham Balls)

Method:

Combine the egg, breadcrumbs, parsley, salt and mustard in a bowl. Mix thoroughly then add the minced ham. Using your hands, knead the mixture together then form into 25mm balls and place on a lightly-greased baking tray.

Transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until lightly golden. Meanwhile, combine the pineapple and apricot preserves in a deep frying pan over medium meat. Stir with a wooden spoon until almost melted then add the ham balls. Continue cooking, stirring frequently, until the liquid comes to a boil. Take off the heat, allow to cool for 5 minutes then serve on a bed or rice.
