Bolinhos de Bacalhau (Salt Cod Fritters)

Bolinhos de Bacalhau (Salt Cod Fritters) is a traditional Portuguese recipe for a classic dish of fritters made from a blend of salt cod, potatoes, onions, parsley and plain flour bound with eggs that are shallow fried to cook. Ingredients:

300g salt cod, soaked over night in several changes of water
600g potatoes
1 large onion, grated
1 bunch of parsley, finely chopped
2 eggs
salt and freshly-ground black pepper, to taste
70g plain flour
olive oil for frying

Method:

Drain the salt cod, place in a pan, cover with water and bring to a boil. Discard the water, cover with more fresh water, bring back to a boil then reduce to a simmer and cook for about 40 minutes, or until the fish is tender. Drain the cod, allow to cool until it can be handled then flake.

Bring a pan of lightly-salted water to a boil. Scrub the potatoes, add to the pan and cook for about 25 minutes, or until tender. Peel the potatoes and mash the flesh.

Stir the onion, flaked fish and parsley into the mashed potatoes. Season to taste with salt and black pepper then work in the eggs to bind (if he mixture does not hold very well you may need to add a little flour).

Shape into thick patties then heat olive oil in a non-stick pan. Add the fish cakes and fry until golden brown on both sides and cooked through. Serve with piri-piri sauce and a crisp salad.
