Young sea kale flowers (before they open) can be cut of the plant with a sharp knife and make a very acceptable substitute for broccoli in any dish.
Ingredients:
200g young sea kale flowers
a knob of butter
salt and black pepper, to taste
freshly-grated nutmeg, to taste
Method:
Add the sea kale flowers to a steamer basket and cook over a pan of boiling water for about 10 minutes, or until tender. Transfer to a serving dish, add a knob of butter then season with salt, black pepper and a grating of nutmeg.
If desired you can add white sauce and cook under the grill (broiler) until lightly browned before serving.
