Ingredients:

500g mature sea kale roots
olive oil or lard or duck fat

Method:

Peel and wash the sea kale roots. Drop into a pan of boiling salted water and cook for 35 minutes, until just tender.

Drain the roots in a colander, strain and then sliced into rings.

Place a deep frying pan over medium heat and when hot add the olive oil or lard (these give the best flavour).

When the oil is hot add the sliced sea kale root pieces and fry for about 5 minutes per side until nicely coloured.

Serve hot.
