Boharat is a classic Middle Eastern spice made from a mix of spices and rose petals. It is very popular in the cuisine of Iraq.

Ingredients:

4 tbsp allspice
1 tbsp black peppercorns
2 x 7cm sticks of cinnamon
1 tbsp freshly-ground nutmeg
1 tsp cardamom seeds
1 tsp cloves
1 tsp ground ginger
1 tsp dried rose petals

Method:

Roughly pound the cinnamon in a pestle and mortar then transfer to a coffee grinder along with all the other spices. Grind to a very find powder and place in an airtight jar.

This will keep for up to six weeks in your store cupboard.
