Bobor Taro (Taro Root Pudding)

Bobor Taro (Taro Root Pudding) is a traditional Cambodian recipe for a classic pudding made from taro rots boiled with jasmine rice in a sugar syrup until tender and served topped with coconut cream dressing. Ingredients:

200g taro root, diced
50g sweet jasmine rice
1/4 tsp salt
125g sugar
1.25l water
1 batch coconut dressing

Method:

Wash the rice and place in a large pot with the taro root. Pour over the water and cook over medium heat, stirring occasionally.

When the taro root is tender (about 25 minutes), add the salt and sugar. Taste the resultant pudding and adjust the sugar and salt levels, to taste.

Turn into a bowl, top with coconut cream and serve immediately.
