Blue Sonic Curry
Blue Sonic Curry is a modern Japanese recipe for a weird blue Sonic the Hedgehog coloured curry that's cooked British Indian Restaurant (BIR) style in a gravy finished with cream and creamed coconut. This curry originated in Japan, fairly obviously. It became a phenomenon in 2018 and quickly spread around the world, until (quite sensibly) people decided blue food was unappetising. Sonic blue curry kits are still available occasionally and my kid loves the blue messiness of the whole thing. This is a home-made recipe for the Japanese curry and is presented here more as a curiosity than anything else. The secret to getting the correct intense blue colour is to use blue food colouring gel (the liquid drops just don’t have the right intensity). Even better (maybe not!) this is cooked BIR style…
Ingredients:
1 tbsp vegetable Oil
1 cinnamon stick
1 Green Cardamom Pod
1 chicken breast, chopped into small cubes
1 tbsp garlic and ginger paste
1 tsp Garam Masala
2 tsp sugar
1 tbsp coconut flour
1 Cup curry base gravy warmed
1 tbsp creamed coconut
125ml (½ cup) cream
1 small pinch bicarbonate of soda
2 tsp butter
2 tsp lemon juice
1 tbsp blue food colouring (gel)
Method:
Place a wok or curry pan over high heat. When hot add the oil and as soon as it reaches temperature add the cinnamon and cardamom pod. Once the spices start to sizzle, throw in your chicken chunks along with the ginger-garlic paste.
Continue cooking until the chicken is nicely browned then add the garam masala, sugar and coconut flour. Stir well to combine and continue cooking until the coconut flour absorbs the oil and you end up with a thick paste.
Stir in the base gravy and creamed coconut at this point. Bring to a simmer and cook until the base gravy becomes really thick.
Reduce the heat to medium, then add the cream, bicarbonate of soda and butter. Stir until thoroughly combined and the mixture comes to a simmer.
Take off the heat then stir in the lemon juice and food colouring. Stir until the curry is uniformly blue. Serve
Note that the blue colour is intensely blue and will stain anything it gets in contact with. So take care with clothes, carpets etc.
Serve the curry with plain white rice.
