This is a soup that's best served as a starter. Packed full of umami flavour, it will whet your appetite for the meal to come.
Ingredients:
1kg dried bladderwrack (or use sugar kelp or serrated wrack)
1l
Simple Dashi stock
2 tbsp light miso
100g fish and/or prawns, finely sliced
1 onion, finely diced
Method:
For this soup, the bladderwrack must be completely dry before use (this prevents the soup from becoming slimy). Use only the young tips from bladderwrack. Either dehydrate in a dehydrator, or dry in an oven pre-heated to 50°C for 12 hours or dry on newspaper in a sunny spot for 5 days. The bladderwrack needs to be completely dry before use.
Take your pre-prepared dashi stock, pour into a saucepan and slowly bring to a boil. Take off the heat and stir in the miso (after this point the soup must not be boiled again).
Now add the dehydrated seaweed, thin slices of fish or prawns and the finely-diced onion to the soup base. Allow to cook naturaly in the hot stock for 5 minutes then serve immediately.
