Blackened Tuna
Blackened Tuna is a modern Fusion recipe for a classic dish of tuna steaks coated and cooked in Cajun blackening spices that's served with a wasabi vinaigrette dressing and which makes an excellent dish for Valentine's day. This is a blend of classic Louisiana Cajun cookery with Japanese sashimi flavours in the wasabi dressing. I(f you halve the quantities and prepare for only two people, this also makes an excellent Valentine's day supper, particularly if you dress the fish with a ginger flower and strew with edible flower petals (roses, violets, primroses etc).
Ingredients:
4 centre-cut tuna fillets (about 200g apiece)
For the Blackening Spices:
1 tbsp paprika
1 tbsp onion powder
1 tbsp garlic powder
1 tsp fine sea salt
1 tsp freshly-ground black pepper
1 tsp ground white pepper
1 tsp dried thyme leaves, crumbled
1/2 tsp cayenne pepper
1/2 tsp ground oregano, crumbled
For the Wasabi Dressing:
3 tbsp
wasabi powder
90ml water
1/2 tsp freshly-grated ginger
1/2 tsp fresh garlic, minced
60ml white wine vinegar
1/4 tsp fresh lime juice
180ml olive oil
Method:
Combine the salt, garlic powder, paprika, onion powder, black pepper, white pepper, cayenne pepper, thyme and oregano in a bowl. Mix thoroughly to combine then rub the tuna fillets all over with this blackening spice mix.
Pre-heat a cast iron skillet. When very hot, add the coated fillets and sea on both sides until just rare or medium-rare (do not over-cook).
In the meantime, combine the wasabi powder and water in a blender. Add the fresh ginger, garlic, white wine vinegar and lime juice then blitz to combine. With the motor running drizzle in the olive oil. Adjust the seasonings to taste.
To serve, paint each plate with the wasabi dressing. Cut each tuna fillet into two triangular pieces and over lap these on the plate. Drizzle a little of the wasabi dressing over the top and serve accompanied by rice (sticky rice would be best, to go with the theme).
