Ingredients:

350g ripe blackberries, washed
200g plain flour
1 tsp baking powder
2 eggs
2 pinches of salt
100ml milk
3 tbsp soft brown sugar
2 tbsp butter, melted
2 tsp ground cinnamon
60g slivered almonds

Method:

Prepare the blackberries then scatter in the base of an earthenware baking dish. Combine the flour, baking powder, eggs and salt in a bowl and mix thoroughly. Now whisk in the butter to form a fairly thick batter. Whisk in the butter then pour over the blackberries.

Combine the brown sugar and cinnamon and scatter over the top. Finally scatter the almonds over everything. Transfer to an oven pre-heated to 180°C and bake for about 45 minutes, or until cooked through and golden. Serve hot with vanilla custard.
