Ingredients:

200ml frozen or fresh bilberries
100 ml light syrup
thinly-pared zest of 1 lemon
2 tbsp lemon juice
1 tbsp cornflour

Method:

Heat the berries, light syrup and lemon zest together in a pan.

Blend together the cornflour and lemon juice into a smooth slurry and pour the mixture into the pan. Cook, stirring continuously as the syrup mixture simmers for a few minutes on a low heat until it thickened.

You can serve the syrup warm or cold.

This can be bottled and stored.
