Bizcocho de Uvas con Sopa de Chocolate (Grape Cake with Chocolate Sauce): A Spanish recipe for a classic cake containing white grapes and flavoured with mint that's served with a white chocolate cream sauce.

Ingredients


300g white grapes
200g sugar
110g plain flour
4 eggs
100g butter
mint leaves

For the White Chocolate Sauce:
200g white chocolate
200ml milk
100ml cream
1 piece of vanilla pod

Method:

Place the eggs in a large bowl and beat with an electric whisk. Add 100g of the sugar and continue beating until fluffy. Melt 40g of the butter and work into the egg mixture, blending with a wooden spoon.

Sift over and stir in the flour then knead the batter by hand until smooth. Pour into a baking pan that's been greased with butter and dusted with flour.

Transfer to an oven pre-heated to 180°C and bake for between 25 and 30 minutes, or until set. Remove from the oven and allow to cool for 10 minutes.

For the sauce, combine the cream, milk, white chocolate and vanilla pod piece in a saucepan. Heat gently until the chocolate has melted then take off the heat and set aside.

Combine the remaining butter and sugar in a frying pan. Heat until the sugar dissolves then wipe the grapes clean and add them to the pan. Cook on low heat for about 8 minutes, or until the grapes are tender.

Turn the cake base out onto a serving plate. Arrange a ring mould in the centre and mound the grapes in this. Pour the white chocolate sauce around the outside then garnish with a few sprigs of mint.

Serve slices of the cake accompanied by the white chocolate sauce served in a sauce boat.
