Bisort Bolognese

Bisort Bolognese is a modern British recipe for a classic Italian-inspired dish of green spelt, leeks, onions, tomatoes and bisort leaves in a tomato-based sauce that's served on a bed of spaghetti pasta. Ingredients:

120g green spelt
1l vegetable stock
2 large onions, finely chopped
2 tbsp butter
4 carrots, grated
200g leeks, sliced
3 handfuls of bisort leaves, coarsely chopped
3 tomatoes, diced
3 leaves of fresh lovage, finely chopped
3 garlic cloves, crushed
freshly-grated nutmeg, to taste
freshly-ground black pepper, to taste
3 tbsp tomato purée
whole-wheat spaghetti
grated cheese, to garnish

Method:

Combine the vegetable stock and green spelt in a pan. Bring to a boil then reduce to a simmer and cook gently for 20 minutes.

In the meantime, melt the butter in a pan, add the onions and fry gently for about 4 minutes, or until soft and translucent. Stir in the carrots and leeks and cook for 2 minutes more, stirring frequently, before adding the bisort leaves, tomatoes, lovage and garlic. Season to taste with nutmeg and black pepper, to taste.

Drain the spelt and add to the vegetable mixture along with the tomato purée. Bring the mixture to a simmer and cook gently for a further 10 to 15 minutes, or until the sauce is thick enough to coat the pasta (if it's too thick thin with a little water).

In the meantime, cook the pasta. Serve the Bolognese sauce with the pasta and top with a little grated cheese.
