This is the classic French Christmas biscuit (cookie) that is typically plainly iced and served as a treat with mulled wine or used to decorate the tree our house.

Ingredients:

175g butter, softened
100g caster sugar
1 medium egg yolk
250g plain flour
royal icing for decorating
Silver decorations (sugar sprinkles, for example)

Method:

Cream together the butter and sugar until pale and fluff. Add the egg yolk and beat thoroughly to combine then mix in the flour, bringing the ingredients together as a dough.

Turn the dough out onto a floured work surface and knead well until smooth and elastic. Form into a ball, cover with clingfilm (plastic wrap) then place into a refrigerator and chill for 30 minutes.

After this time, turn the dough out onto a floured work surface. Roll out lightly then place between two baking sheets and roll out to about 2.5mm thick. Take off the top sheet then use cookie cutters (or a sharp knife) to cut out Christmas shapes from the dough.

If you are going to use these as tree decorations cut holes to thread a ribbon now. Arrange the biscuits (cookies) on baking trays lined with baking parchment. Transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until cooked through and lightly coloured.

Remove from the oven and allow to cool on the baking trays for 10 minutes then transfer to a wire rack to cool completely.

When the biscuits are cold, decorate with royal icing. Use a mix of colours and appropriate festive decorations. Sprinkle with sugar or silver decorations to finish the effects then set aside for the icing to set and harden before storing, serving or using to decorate your tree as edible decorations.
