Bhapa doi or mishti doi is a fabulous 5-ingredient Indian dessert resembling cheesecake. Made with Greek yogurt and a fruit topping (mangoes in this case, which are native to the region), it is super creamy and healthier than regular cheesecake! This can be made in an instant pot or an oven and both recipes are presented below.
Ingredients:
250ml (1 cup) full fat Greek yoghurt
1 tin condensed milk
250ml (1 cup) fresh milk
1 cup mango pieces (fresh or frozen)
2 tbsp sugar
pinch of saffron
Method:
For the mango topping or glaze: Combine the mango pieces, sugar and saffron in a blender then process to a smooth puree. Set aside until needed.
For the cake mixture: Whisk together the Greek yogurt, condensed milk and fresh milk.
To cook in an instant pot, pour the yoghurt mixture into a Pyrex (or other non-reactive heat-proof bowl) that will fit inside your instant pot. Cover well with kitchen foil. Pour 500ml (2 cups) of water into the inner lining of the instant pot. Place a trivet in the base then set the bowl with the yoghurt mixture on top. Lock the lid, close the pressure valve then set the cooker to pressure cooking mode.
Set the timer to 15 minutes then wait for natural release of pressure once the timer has run down to zero. Carefully remove the bowl from the cooker then set aside to cool down. Once cooled transfer to your refrigerator.
To cook in an oven, pour the yoghurt mixture into a baking dish. Transfer to the centre of an oven pre-heated to 175C (350F) and bake for 45 minutes. After this time, remove from the oven then set on a wire rack to cool. Transfer to the refrigerator.
Once the Bhapa Doi is in the refrigerator chill for at least 2 hours (more is better).
Once properly chilled, remove from the oven and spread the mango glaze over the top. You can garnish with a few mango slices if you like.
Slice and serve.
