Berry Cherry Crumble: A British recipe for a summer fruit crumble of strawberries, blueberries and black cherries with a butter, syrup and oat crumble topping that's baked and served with custard.
Ingredients:
250g punnet of strawberries, hulled
200g punnet of blueberries
425g tin of pitted black cherries, strained (reserve 120ml of the juice)
1/2 tsp cornflour (cornstarch)
1 tbsp icing sugar
For the Topping:
90g butter
60ml golden syrup (corn syrup)
220g rolled oats
Method:
Halve the strawberries and arrange in the base of an ovenproof dish with the blueberries and cherries, mixing well to combine.
Blend the cornflour with the reserved cherry juice, whisking until smooth. Pour this over the fruit then sprinkle on the sifted icing sugar.
For the topping, melt the sugar with the syrup in a small pan over low heat. Take off the heat and stir in the rolled oats until well combined. Spoon the oat mixture over the berries then transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until the topping is golden brown and crunchy.
