Bergamot and Cheese Tuiles

Method:

Wash and dry the bergamot (bee balm) leaves then lay then flat (with the underside uppermost) on a baking tray lined with parchment paper.

Mix together the cheeses, sesame seeds, black pepper and paprika in a bowl. Use this mixture to spread evenly over the backs of the leaves.

Transfer to an oven pre-heated to 200°C and cook for 10 minutes, or until the cheese mixture is golden brown. Transfer to a plate to cool completely before serving.
