Classic Belfast Potted Herring is a simple herring dish from Northern Ireland. This version is the 'plain' form. A common variant is to cover the fish with golden breadcrumbs before putting the dish in the oven.
Ingredients:
12 herring, butterflied and de-boned
Non-brewed condiment malt vinegar
1 onion, chopped
12 allspice berries
a few bay leaves (optional)
Salt and freshly-ground black pepper, to taste
Method:
Roll the herring from theheat towards the tail. Tightly pack the rolled herring in an ovenproof dish.
Pour over enough vinegar to barely cover the fish and scatter over the onion and allspice berries. Season liberally with salt and black pepper then scatter over the bay leaves (if using).
Transfer to an oven pre-heated to 180°C and cook for 25 minutes until the fish is cooked through and golden.
They can be served warm, but are best allowed to cool and then served either as a starter or to accompany chips as a main meal (they are a fish shop staple in Northern Ireland).
