Beijino (Coconut Kisses) a Classic Peruvian recipe for a sweet (candy) made from a blend of coconut, sugar, eggs and flour moistened with milky tea that's cut into bars, topped with a clove and served.

Ingredients:

200g desiccated coconut
120ml hot water
300g sugar
2 egg yolks
1 tbsp plain flour
120ml milky tea
6 cloves


Method:

Mix the coconut and hot water in a bowl and set aside.

Dissolve the flour milky tea, beating until smooth.

Combine the coconut, tea and the egg yolks in a pan then stir in the sugar. Heat the custard gently until it thickens. Take off the heat and set aside to cool.

Once cold turn into a sheet of clingfilm (plastic wrap). Roll up into a tight sausage and set aside in the refrigerator for two hours.

Once chilled and set roll in granulated sugar. Cut into six pieces, arrange in paper cases, insert a clove to decorate and serve.
