Beignet Malien (Malian Doughnuts) is a traditional Malian recipe for a classic snack o sugar, flour and oil dough balls that are deep fried until golden and served warm and dusted with vanilla sugar. Heat the oil in a deep fryer or a wok to about 180°C.
Sift the flour and baking powder into a bowl then stir in the sugar.
Work in enough water to give a soft but not sticky dough. Turn out onto a floured work surface and knead until smooth and elastic. Shape the resultant dough into balls then drop in the hot oil and fry for 4 minutes, or until golden brown all over and cooked through.
Drain on kitchen paper, dust with vanilla sugar and serve.
