Beans with Artichokes and Olives

Beans with Artichokes and Olives is a modern British recipe for a classic dish of boiled fine beans, spring onions and artichoke hearts served in tarragon vinegar dressing and which makes an excellent side dish for Christmas or Thanksgiving dinner. Ingredients:

200g fine beans
8 spring onions
1 tbsp olive oil
6 sprigs of rosemary
90g green olives, pitted
2 preserved artichoke hearts, quartered
1 tbsp capers, rinsed
1 tbsp extra-virgin olive oil
2 tsp tarragon vinegar

Method:

Bring a pan of salted water to a boil, add the beans and blanch for 2 minutes then drain. Trim the spring onions to the same length as the beans.

Heat the olive oil in a pan over medium heat. Add the beans, spring onions and rosemary sprigs and fry for 2 minutes, or until lightly browned. Take off the heat then add the green olives, artichokes, capers, extra-virgin olive oil and vinegar. Season with salt and freshly-ground black pepper to taste then toss to coat the vegetables with the dressing.

Turn onto a warmed plate and serve immediately.
