This is a classic starter or snack of battered fully-open dandelion flowers. These fritters can be served with either a sweet or savoury dipping sauce, depending on the occasion and what tickles your fancy.

Ingredients:

125g (1 cup) self-raising flour
250ml (1 cup) milk or sparkling water
1 egg
pinch each of salt and freshly-ground black pepper (if doing a savoury recipe), a pinch of cinnamon (for sweet)
fully-open dandelion flowers
flour for dusting
oil for deep frying

Method:

Combine the flour, milk (or water), egg and seasonings in a bowl and whisk to a smooth batter.

Heat up oil in a deep fryer, wok or deep saucepan. Once the oil is hot, dust the flowers with flour then submerge in the batter.

Carefully drop the battered flowers in the hot oil and deep fry until golden brown and puffed up (about 2-3 minutes). Remove with a slotted spoon and drain on kitchen paper to remove the excess oil.

Serve with your choice of dipping sauce.
