This is a recipe for a basic sweet white sauce to be used with steamed puddings, especially Christmas pudding! This is made with cornflour, as it's much easier, but my grandmother used to make this with flour. The version presented here is alcohol free, but to make brandy sauce simply add a generous glug of brandy towards the ned of cooking.

Ingredients:

1 tbsp cornflour
1 tbsp vanilla sugar
300ml milk
a knob of butter

Method:

Mix together the cornflour and sugar in a bowl then add a little milk to it from the 300ml. Add just enough milk to mix the sugar and cornflour to a smooth slurry.

Add the remaining milk to a saucepan and bring to a boil. Immediately take off the heat and pour over the cornflour paste. Beat well to combine then return to the pan along with the butter and heat, stirring constantly, until thickened.

This can also be made in a microwave. Just add the remaining milk to the bowl then drop in the butter and place in a microwave. Heat on repeated 30-second bursts, beating after each burst. Continue cooking until the sauce is hot and thickened.
