Combine the couscous, water and olive oil in a 2.5l earthenware casserole dish (or glass bowl).
Cover with a vented microwave-safe lid (or use clingfilm [plastic wrap] with a hole poked in the centre) then place in your microwave. Cook on high power (1200W) for between 1 and 2 minutes (or until the liquid comes to a boil).
Turn off the microwave, stir in the olive oil, cover and allow to stand for 5 minutes. Fluff lightly with a fork and serve.
